Vendors in Edmonton

We went with BBQ acres in a community hall that we're setting up. We looked at Glenora hall, and a few other venues, but decided we wanted certain things that we weren't permitted to have at a venue. So which is better? Giving up a few things and letting some else do the heavy work? Or bust our butts to make it exactly what we want?
