I'd probably put it towards my wedding dress budget. I just started shopping today and would like to see what my options would be if I expanded the budget.
We bought a house before our engagement, and that’s been my priority budget before wedding planning began. I’d put the $1000 towards the honeymoon since I don’t even have a destination in mind.
I'd either add another free drink for each guest (we don't have a deal for drinks, so it's almost full price even for host cost).... Or I'd be able to add more decor for the wedding.

We'd use the money towards our flights home for the wedding! One less thing to worry about!
We would use it either towards upgrading our flights to 1st class (were flying back home for the wedding) or towards our vendors. A $1000 could do a long way and really reduce some of the wedding stress lol.
Honeymoon. Or, if it had to be specifically on the wedding, I would do half for my photographer to get them for longer, and half to my dress, and would have gotten my dream dress instead of the one I purchased.
I would like to help my girls out with any expenses (i.e. dresses, shoes, make up, hair) so they can look extra fab! Or, I'd put it towards my honeymoon!
I think I would want to put it towards entertainment. We already have the venue, food, and open bar that we are happy with but having a sunset wedding in October means an early wedding so a long night. We don't expect people to dance for 7 hours - they need something else to do too. Maybe a bouncy house, magician or something to bring the inner child out of everyone (seeing as how it will be a no-kid wedding).
Either use it towards our final booze bill or towards our honeymoon!

I would split it between our honeymoon and the bar at our wedding. $500 towards drinks for our wedding party (as we have a cash bar) and $500 to upgrade our vacation. Adding an extra $500 would open up more options for our limited budget. And the additional $500 would also allow me to give back to our wedding party on top of their gifts to really show how appreciative we are of them. I hope to do this for our wedding party regardless if $1000 fell from the sky, I just have to find a way to make it work.
