I would be a little sad, because we spent that money on their food and was looking forward to celebrating with them, but, not much I can do about it so no point in getting angry.

Situations do arise that would make it difficult for a guest to attend. I would be a little sad, but nothing that a cocktail or two can't cure.

I will go with B. It would suck because I would love everyone to be there, but life happens. If it was a few weeks to a month that'd be better. Then I could update the caterer and not pay for their meal.
