Florists as any vendors are getting booked fast and quick. The sooner you find the one you like and priced just right, booking would be suggested before losing out on the deal.

I would think the earlier the better. Wedding season is a much broader season than it once was, but talented vendors still book up fast.
Some might charge a portion when you book, so as long as you've got the cash in the budget any time is fine.
