There are a few charts online about calculating alcohol that are quite handy!
For your food I would let your catering know about the allergies and see if they can whip something up. I would also have them put up signs/list ingredients of foods you think might be troubling to family members

I hear your issues and ways to try avoiding any hospital trips on your day. For food choices, let the caterer to put signs on all their dishes and any notes No Peanuts or Dairy Free, etc. It would help for those with the same issue to avoid taking other dishes and those particular for them to eat.

Alcohol wise, you can look up charts for guest servings online and return unopened bottles if you buy more just in case.

For food: If they are simple allergies - they can watch what they eat as I will be having a BBQ buffet. If they don't eat meat, that is a choice of theirs - and because I will let people know our food vendor before the wedding it is up to them to call and ask if their food has certain things in it. If it does - they can eat before they come or pack something. I will word in nicely on my wedding website, but that's how I am dealing with that. One of my own BM is vegan... she will be packing a lunch Smiley smile

For Booze: If you are doing your own bar, I would recommend hiring bar tenders and then they would also be able to help you with figuring out how much to get. As well, if you buy too much you can just return it if unopened! For my wedding of 250 people we are estimating roughly 5-6 drinks a person. Sure, I have family that doesn't even touch alcohol, but my FH has family that will drink more than 5-6 drinks! It evens out so don't worry too much about counting everybody's possible drink count.

If price is a worry, maybe do a cash bar? You can always just provide the wine on the tables and maybe a "free drink" coupon compliments of you and your Fiancé?

    P.S. Congrats on the engagement!
