We are doing constellations instead of table numbers. Where our venue for the reception is a circular room , I want to make the seating chart have a list of the tables on the side then make a "map of the stars" so to speak with where the tables are in the room. The escort cards will have the constellation image and name on it too and it'll make it easier for people to know which seats are taken

Both! We will have a seating chart for the ease of guests to find their tables, however our caterer has requested that we have escort cards with small symbols for them outlining the meal chouce

Neither, we're letting everyone sit where they want. Except for parents and grandparents. They will have a table close to the head table.

We will most likely be doing both... the tables will all be joined but to give the guests a better idea of where they will be seating we will need a seating chart and when they get to the table they will be able to find their seat.
