We basically thanked them for joining us on our special day and being a part of our lives. We then thanked them for the generous gift (this meant we didn't need to be specific for people who only gave money) and then specified its use or whatever if it was a physical gift.

We wrote more specific things for our wedding party members.

Well, you can't really pre-write this, but if something in particular happens at the wedding with different guests (a funny dance, participating in a game, an inside joke...)...

Aside from that, I wouldn't worry too much about making it too long, or overly personal.

Simply,

Dear So-And-So,

We were so happy you to have you join us on our special day. We hope you had a wonderful time at our wedding.

Thank you so much for *insert gift here*. We can't wait to (make dinner/go on our trip/cozy up for movie nights - whatever you would be using their gift for).
