Preserving Wedding Cupcakes for Anniversary

Brittany, on June 17, 2019 at 14:54 Posted in Wedding reception 0 7

We are getting a small cutting cake and cupcakes for our wedding.

The cutting cake will only be one tier. We figure since it will be cut, it may not freeze well so we may just serve it to our head table.

We still want to do the tradition of having our wedding cake for our anniversary.

We were thinking of freezing a cupcake or two instead.

Has anyone done this?

Any suggestions on best way to preserve them to keep them from getting freezer burnt?

No they are buttercream. And unfortunately it is not in our budget to do a two tier, plus for us I feel it would just be wasteful. We are doing a naked style cake anyways, so I am not sure how well it would freeze.

Is your cupcake covered in fondant? This would be the easiest to freeze. Buttercream isn’t as easy.

We’re doing a two tiered cake for this reason 4” and 6”. The fondant actually protects the cake so it’ll be fresh when you unfreeze it. We’re cutting our 4” and serving to wedding party and parents and then freezing our 6”.

our baker gave us amazing advice for how to freeze it so maybe ask your baker if they have any tips!

All I know is that my parents tried doing that with their cake and it didn't do well in the freezer.... Definitely should test it before the big day. I would say that the way I would do it is by using a vacuum sealer and not care what it does to the icing - or there are containers that can be vacuum sealed depending on the sealer you have that should work?

I have never frozen cupcakes. But you could try freezing it first on its own to settle the icing. Then wrapping it in plastic wrap, then into a freezer bag. This way you won't ruin the icing. I have seen some people do this with cake so that they don't mess up the icing!
