Hey Anne, we have a lot of caterers listed in the WeddingWire vendors list, I'd check through their storefronts to see who can make you a custom menu - here are the caterers in Vancouver! EdgeCeptional Catering and The Lazy Gourmet are just two I found on the first page of results that can provide Middle Eastern cuisine.
