Allseasons.com has legal Officiants across Canada and for Quebec if listed. You can read reviews and ask in person how they do deal with the transaction. No harm in checking out the website and inquiring with the ones you're interested to marry you two.

Quebec is one of the few (if not only?) province that allows you to use anyone you wish to officiate your wedding. So if you have a great friend or family member that holds a special relationship to the two of you that you'd like for them to marry you, you can get them to go to the Directeur de l’état civil and grant them a one-day officiant designation (as long as they're 18 and holds Canadian citiizenship).

Something to consider, in case you're can't find someone you jive with.

There is a search on weddingwire and you can search for an officiant there. If wedding shows start up again you can also look for one at one of those. There is a fee for them to perform your wedding that you and SO will have to pay. Find someone you are comfortable with. They should be able to guide you through the process.
