You can make a virgin Shandy using non-alcoholic beers (it's just half beer and half Sprite/7Up). The Sprite/7Up will cover the gnarly taste of the non-alcoholic beer and the bitters from the beer will make the lemon soda feel less sugary. It's a nice fizzy summer drink.

You can make virgin sangria using non-alcoholic wine. Depending on how "dry" the non-alcoholic wine is, you can add iced tea into the mix to infuse some bitter back into the drink (make sure it's ice tea with no sweetener or sugar). You can make both white and red versions. Garnish with your favourite fruit. I suggest something full bodied like cherries and peaches with the red and something light and zesty like citrus and green grapes for the white.

If your venue has an espresso machine, iced coffees would be amazing for the summer.

There’s quite a few virgin drinks you can have that won’t have coconut. You could have: Tortugas, Shirley Temples, Virgin Marys, Saint Clements, Roy Rodgers, Freddie Bartholomews, Gunners, or other types of fancy non-alcoholic drinks like Arnold Palmers.

Are you looking to avoid anything that resembles alcohol or is it okay as long as the item itself is alcohol free. For example, is alcohol-free wine or alcohol-free beer okay?
