Sounds like you two need to sit down and have a chat about why it is important to him to have grace, and why it is important for you to not have grace. Once you both lay out your feelings it might be clear who wants to compromise. You could also speak to whoever would lead the grace about non-denominational options, or wording you would both be comfortable with.

I think that grace is something that people can do silently on their own should they feel the need. Is there an equivalent in your religion? If so, maybe you guys could do a quick version of each before dinner?

Is it worth an argument? Or is it going to completely ruin the day to say grace? Will it offend anyone if it's done? Will it offend anyone of it isn't done?
I say if it's not going to make or break anything, then give him his little part of the wedding.
