From what I know about orchids they actually do best out of water. Theyre technically airplants so too much water causes them to rot. At least when they’re still attached to a plant. I help my sister who is a florist and we just did a huge wedding with purple orchids. They’re a lot less delicate then I imagined but I did notice They perked up not long after we took them out of water. You’ll be okay if your arranging them day of/day before

I'm not using real flowers so I can't say for sure - but I would think just like any other flower when you cut it and put it in a vase it will last at least a week? It all depends on the environment it would be in before you place them in the water and then during. Best bet I've seen here on wedding wire for other flower questions would be to call up the florists that you are getting quotes from and see what they say.
